Broccoli salad is an addictive and fun side dish full of great color, texture, and flavor. Made with broccoli, perfectly cooked bacon, sweet dried cranberries, sliced almonds and sliced red onion for great texture and flavor in every bite.

This. Stuff. Is. Delicious. The greek yogurt dressing starts out kind of dry, so you need to let it rest in the fridge for a bit, but by the time its ready to eat its marinated to perfection.

What do you need to make broccoli salad without mayo

Gather these supplies before you start mixing:

  • Raw Broccoli – don’t substitute with frozen or canned, use fresh
  • Red Onion – sliced thin
  • Bacon – cooked until just crispy and crumbled
  • Dried Cranberries
  • Sliced Almonds

Broccoli salad dressing ingredients:

  • Greek Yogurt – get plain
  • Granulated Sugar – just a little for sweetness
  • Red Wine Vinegar –
  • Salt and Pepper

How to make this simple side dish

  1. In a large bowl, combine the broccoli, red onion, cooked bacon, dried cranberries and sliced almonds.
  2. In a small mixing bowl, whisk together the greek yogurt, sugar, red wine vinegar, and salt and pepper to taste.
  3. Add the dressing to the broccoli mixture and toss to coat.
  4. It will seem dry at first, that’s ok! Cover and place in fridge for at least 30 minutes.
  5. Enjoy!

Storage Information

This broccoli salad will keep in the fridge, in an air tight container, for up to 3 days.

Ingredients

  • 8 cups broccoli cut into bite sized pieces
  • ½ red onion cut into thin bite sized slices
  • ½ pound bacon cooked and crumbled
  • ¾ cup dried cranberries
  • ¾ cup sliced almonds
  • 1 cup plain greek yogurt
  • ½ cup white sugar
  • 3 TBSP red wine vinegar
  • salt and pepper to taste

Instructions

  • In a large bowl, toss together the broccoli, red onion, cooked bacon, dried cranberries and sliced almonds.
  • In a small mixing bowl, whisk together the mayonnaise, sugar, red wine vinegar, and salt and pepper to taste.
  • Add the dressing to the broccoli mixture and toss to coat.
