How to make perfect garlic roasted carrots

Making a great roasted carrot recipe is simple! It only takes a few simple steps. For the full recipe, make sure you scroll down to the recipe card below.

Prep work

  1. Preheat the oven to 400 F.
  2. Get out a baking dish large enough to hold your carrots in mostly a single layer.

Season carrots

  1. In the baking dish, whisk together the water, oil, salt and pepper.
  2. Toss in the garlic cloves and carrots and toss to coat with the liquid.
  3. Dice the butter up into small pieces and place over the carrots.

Baking the carrots

  1. Tent with foil to keep the steam in. This will help to cook the carrots tender without browning them too much.
  2. Roast for 30 minutes.
  3. Remove the foil and roast for an additional 30 minutes, or until the water has evaporated and the carrots are lightly brown in spots.
  4. Transfer to a serving dish and enjoy!

Do you peel carrots before roasting?

That is entirely up to you! You do not need to peel them as long as you give them a good scrub before you roast them.

Ingredients

  • 1 pound medium carrots peeled
  • ¼ cup water
  • 4 large garlic cloves
  • 1 TBSP canola oil
  • 1 TBSP unsalted butter
  • salt and pepper

Instructions

  • Preheat oven to 400 Degrees.
  • In the baking dish, whisk together the water, oil, salt and pepper.
  • Toss in the garlic cloves and carrots and toss to coat with the liquid.
  • Dice the butter up into small pieces and place over the carrots.
  • Tent with foil and roast for 30 minutes, until tender.
  • Uncover and roast for another 30 minutes, until all the water has evaporated and the carrots are lightly brown in spots.
  • Transfer the carrots and the garlic to a plate and serve.

    They sound great. I too have discovered that adding garlic to roasted things makes them more delicious. Next time you make roast lamb, try poking holes in it with a knife and put slivers of garlic in the holes. It'll melt in your mouth!

  3. Roasted vegetables are the best and I really enjoy the combination of carrots and ginger.
