Italian Meatball Burgers

Well, its happened. Munchkin has turned ONE today! We spent a gorgeous day at the zoo today, and will have a little family party on Saturday to celebrate! This past year has flown past for us (probably because someone isn’t big on sleeping, leaving her mama and daddy pretty much exhausted all the time). Munchkin is now walking pretty well, she still climbs everything she can, she insists on eating with silverware and she is just so darn cute. I think we can say we love her, and even if she is as stubborn and willful as both her parents combined, she brings much joy and light to our lives. 

We made these burgers as one last hurrah to the summer (although I suppose you could cook them anytime you wanted, really!) And they are pretty darn delicious! I love the Italian flair on a traditional burger, plus with fresh mozzarella and basil! YUM! They are a little softer than your traditional burger, so don’t man-handle them on the grill or you will be sorry. 
Italian Meatball Burgers

Cook Time: 15 minutes

Ingredients (4 servings)
  • 1 TBSP olive oil, divided
  • 3 garlic cloves, minced
  • 3 shallots, finely diced
  • 1/3 cup ricotta cheese
  • 1/4 cup chopped fresh parsley
  • 1/4 cup panko breadcrumbs, toasted
  • 1/2 tsp pepper
  • 1/4 tsp crushed red pepper flakes
  • 1/8 tsp salt
  • 8 ounces lean ground pork
  • 2 links turkey italian sausage (casings removed)
  • 1 egg
  • 4 TBSP low sodium marinara sauce
  • 4 buns
  • 8 basil leaves
  • 1/2 cup fresh mozzarella cheese, cut into 4 slices
Instructions
In a medium skillet over medium heat, warm 1 tsp oil.
Sauté the garlic and shallots 3 minutes, or until the shallots are softened, sitting frequently.
In a medium bowl, combine the shallots, ricotta, parsley, breadcrumbs, pepper, red pepper flakes, salt, pork, italian sausage and egg.
Divide the meat into 4 equal sections.
Shape each portion into a ball and then flatten into patties.
Place the patties on a heated grill rack, grill 6 minutes, turn and grill another 6 (or until it registers 160 degrees internally).
On each bun place 1 TBSP marinara sauce, 2 basil leaves and 1 slice mozzarella cheese.
Top with patty and Enjoy!
