1 yellow onion, diced
28 oz whole tomatoes, diced
30 oz garbanzo beans (chickpeas), drained and rinsed
2 tsp ground cumin
2 tsp dried oregano
2 garlic cloves, minced
2 or 2.5 lb pork shoulder
3 cups chicken stock
Toppings: sliced radishes, cilantro, avocado and lime wedges
Place the diced onion, the diced tomatoes, the garbanzo beans cumin, oregano, garlic, pork and chicken stock into the crock pot.
Place the lid on and cook on low heat for 8 hours.
Serve the soup topped with sliced radishes, chopped cilantro, diced avocado and lime wedges.
