Each week I team up with an awesome group of bloggers who are dedicated to bringing you a healthy-ish, easy, seasonally appropriate meal plan that is developed specifically for busy families who want awesome food but are short on time!
Hello Spring! This time of year is so fun (and by fun, I mean kind of crazy!). One day the weather is 70 degrees and gorgeous, and the very next day there is 4 inches of snow outside! It is kind of hard to know what to wear, much less what to cook. This week’s meal plan is packed with amazing flavors and easy meals that are perfect whether the ground is covered with snow or if your windows are wide open.
How It Works:
- Every Friday morning a new meal plan will be published with 5 dinners plus two extras (sides, desserts, etc). Come check it out as needed throughout the week or sign up here to have it sent directly to your email inbox!
- All the meals are perfect for busy families – they focus mostly on seasonal whole food dinners (but occasionally something “unhealthy” sneaks in – we aren’t super sticklers here). And desserts don’t count as healthy, because they just shouldn’t.
- Because these are seasonal meal plans based on the month of year, I will be numbering them 1,2,3, etc. based on what week of the month it is, so you will always be able to find awesome meals easily. Go HERE to find even more meal plans!
Thrive At Five Weekly Meal Plan – March Week 3
MONDAY – Sweet Potato Chili with Black Beans and Quinoa – This chili is da bomb diggity! Smoky, rich, tons of veggies and protein packed sweet potatoes! You really can’t ask for more! This Meatless meal will totally knock the socks off your family – and I promise, they won’t even miss the meat!
TUESDAY – Food Truck Fried Tacos – This 30 minute meal will blow your regular tacos out of the water! The shells!
WEDNESDAY – Skillet Pesto Chicken and Vegetables – This 30 minute skillet meal is a perfect way to have a quick and healthy dinner – big on veggies and flavor, but short on time!
THURSDAY – Thai Style Spaghetti Squash – Yay for another meatless meal! This one is packed with awesome flavor and easy to throw together. Make this meal faster by either cutting the squash in the morning and letting it sit with paper towels in the fridge all day, or cook them in a slow cooker while you are at work.
FRIDAY – Easy Oven Baked Fish Nuggets – Forget those cheap frozen nuggets you can buy at the store and make your own! These little bites are so full of flavor and so easy to do! Cook these little buddies on an oven rack to ensure a crunchy coating.
Mini Quinoa Frittata Bites – Super simple, extremely versatile, and perfect for any meal of the day! These little bites will quickly become a family favorite.
French Toast Overnight Oats – These overnight oats take literally 5 minutes to prepare in the evening, but will yield an amazing breakfast in the morning! You can serve warm or cold, and I am pretty sure you are quickly going to become hooked!
