Easy Cucumber Salad

This cucumber salad is a great dish. With only a few ingredients, its quick and easy to make! Just stir the ingredients together and voila!

The quick bath in vinegar and sugar lead to kind of a quick pickle, and the addition of the fresh dill gives a rich, warm and sweet taste to the recipe. Its fresh, vibrant and refreshing!

How to Make Swedish Cucumber Salad Kid-Friendly

This easy cucumber salad recipe is naturally very kid-friendly! Kids LOVE pickles, and this quick side dish is really reminiscent of a pickle! 

This recipe is also part of my Eat Like A Princess Dinner Series, where easy weeknight meals are inspired by Disney Princesses in a fun and easy way to get kids interested in trying new foods. This easy Swedish Cucumber recipe is inspired by the movie “Frozen” and Princesses Anna and Elsa! 

Family Dinner Conversations

Dinner time should be more than micromanaging each and every bite your kids take. Use this opportunity to:

  • Talk about how the cucumbers remind them of pickles – how are they the same and how are they different?
  • Talk about the textures, flavors and smells of the cucumbers. Are they crispy or soft? Are they tangy or sweet? What does it smell like? Do they like the smell of the dill?
  • Ask questions about what their favorite part of the Swedish Cucumbers are, what they would like to change next time, or how you could make it better?

Kids in the Kitchen: How your Kids can Help you Make Swedish Cucumber Salad:

One of the best ways to get kids interested in eating new foods (besides making food inspired by their favorite characters, books, and movies…) is to get them involved! Here are some easy ways your kids can help you make these easy Swedish cucumbers.:

  • Kids aged 1-3 can help you measure wash the cucumbers, pick the dill leaves off the stems, and measure and mix the dressing.
  • Kids aged 4-6 can help you do everything above plus help you cut the cucumbers into slices and toss the ingredients together.
  • Kids aged 7-10+ can help you do everything above, plus help slice the onion, with supervision.

Easy Swedish Cucumber Salad

This easy cucumber salad is a perfect swedish side dish. It only takes a few ingredients and 5 minutes to put together.

Ingredients

  • 1 small red onion
  • cup apple cider vinegar
  • 2 TBSP water
  • ½ tsp salt
  • 3 TBSP sugar
  • 1 TBSP fresh dill finely chopped
  • 5 small Persian cucumbers or 1 english cucumber

Instructions

  • Thinly slice the red onion and cucumbers.
  • Add to a medium sized mixing bowl.
  • In a glass, stir together the vinegar, water, salt and sugar until dissolved.
  • Pour the vinegar mixture over the cucumbers and onions and top with fresh dill.
  • Toss to coat.
  • Cover bowl with plastic wrap and allow to stand at room temperature for at least 30 minutes (or refrigerated for up to a day).

  1. I have a bag of cucumbers in my fridge that I know just what to do with now! My grandpa used to make a similar salad and it’s one of my favorites!

  2. This salad will go great with the meatballs we are having for dinner! I haven’t had this salad for years…. and never homemade! Cant wait to make it!

    That was easy and excellent. Now me and my family won’t be as appetizing to the mosquitos.
    Onions are powerful pest deterrents in the garden. Now, I just need exocrine excrete “Mosquito Famine” due to my body fluids being so disgusting to ingest.

    Just a quick question: the recipe says Persian or English cucumbers (my favorite!) but the foto shows regular cucumbers. Please clarify!

    1. Those are actually persian cucumbers in the photo! However, you can use whatever cucumbers you have on hand!
