This easy sheet pan meal takes less than 30 minutes and is studded with fantastic southwest flavors!
1 package Kielbasa
1 red onion
1 orange sweet bell pepper
1 TBSP EVOO
1 TBSP Southwest Seasoning
16 oz baby red potatoes, quartered
1 cup black beans, drained
1 cup sweet corn kernels
1 cup cherry tomatoes, halved
Preheat oven to 425F.
Spray a rimmed baking sheet with cooking spray.
Place the quartered potatoes, red onion, bell pepper and kielbasa on the baking sheet.
Drizzle with olive oil, sprinkle the southwest seasoning and toss.
Bake for 12 minutes.
Add the tomatoes, black beans and sweet corns to the pan and toss with the rest of the ingredients.
Bake for an additional 10 minutes.
Serve with chopped cilantro, lime wedges and avocado slices.
