This no-bake recipe for Swedish Chocolate Coconut Balls (also known as Chokladbollar), is very simple to make, and the perfect make-ahead dessert that you can do with a child.

“Mommy! These don’t taste like poop!”

 

Yup. If that isn’t the best recommendation I can get for a recipe….

 

My 4 year old and I made these together one afternoon while big sister was at school and miraculously, the baby was sleeping. She helped me measure all the ingredients out and place them in the food processor, and she got to push the button to turn the food processor on, and then she got to help me roll the dough into balls. And I will admit, in a 4 year old’s mind, the pulsed chocolate and oats might have looked not quite so appetizing. We rolled the balls into some dried coconut and then placed them in the fridge to harden until after dinner.

 

It was then that she discovered that no matter what these looked like, they actually tasted pretty amazing!

A group food blogging friends and I got together this week to celebrate the opening of the Winter Games. Because when your life revolves around food, every event in your life must revolve around food.

How do you make chocolate coconut balls?

I love how easy it was to make these chocolate ball! A few simple ingredients needed to be pulsed together in a food processor, and then rolled into balls and then in some dried coconut. That’s it! After a short stint in the fridge to harden them up, they are ready to eat. So easy a 4 year old can do it!

These chocolate balls are the perfect dessert to go with  Swedish Meatballs, Easy Swedish Cucumber Salad and Swedish Red Beet and Apple Salad.

 

And remember, they don’t taste like poop. And now I have said “poop” twice.

Ingredients

  • ½ cup butter room temp
  • 1 cup sugar
  • 3 cups rolled oats
  • 1 tsp vanilla
  • 3 TBSP cocoa
  • ¼ tsp sea salt (affiliate link)
  • 2 TBS strong coffee
  • ½ cup coconut flakes

Instructions

  • In a food process, combine the butter, sugar, oats, vanilla, cocoa and coffee until combined.
  • Using a measuring Tablespoon, measure out balls of dough and roll into the coconut.
  • Place on a rimmed baking sheet lined with a silat.
  • Place in the fridge for at least 30 minutes before enjoying.
