1. Preheat oven to 400°

2. In a large mixing bowl, whisk together the eggs, salt, and pepper.

5. Add in the onion and red pepper and cook until soft, about 2-3 minutes, stirring frequently.

8. Pour the egg and cheese mixture into the pan.

9. Use a rubber spatula to circle the edges of the pan to separate the eggs and make sure nothing is stuck.

11. Bake for 15 minutes. The edges should be firm and lightly browned, and the center is still slightly jiggly.
