Apple Baked Oatmeal is an easy make ahead breakfast that is perfect for meal prep, brunches, or holiday breakfasts! Loaded with apples, cinnamon and walnuts, this recipe reheats great and is delicious! Not just for fall, this breakfast is great all year long!

1. Preheat oven to 350 F.

2. Grease a 9x9 baking pan and set aside.

3. In a large bowl, mix together the oatmeal, brown sugar, ground flax seed, ground cinnamon, ground nutmeg, baking powder and salt.

4. In a medium mixing bowl, whisk together the milk, eggs, and vanilla.

5. Add the milk mixture and the melted butter to the oatmeal mixture and stir to combine. Allow to sit for a minute while you prepare the apples.

6. Core and dice the apples. You can leave the skin on, or peel it - the choice is yours. Arrange the diced apple pieces in the bottom of the prepared baking dish.

8. Pour the oatmeal mixture over the apples and walnuts and spread evenly.

9. Bake for 35-40 minutes, or until the oatmeal is set and firm, and starting to be golden brown on top.
