– 2 TBSP unsalted butter – 2 TBSP all purpose flour – salt and pepper to taste – 1 cup whole milk – 1.5 cups shredded cheese

1. In a large non-stick skillet, melt the butter until it starts to bubble.


2. Whisk in the flour, stirring constantly, for 1-2 minutes, or until it starts to slightly bubble.


3. Slowly whisk in the milk, 1/4 cup at a time. Whisk in each addition completely before adding any additional milk.


4. Add salt and pepper to taste, and whisk constantly for 4-5 minutes, or until the sauce is thickened.


5. Remove the pan from the heat and whisk in the cheese in 2 or 3 additions, whisking until the cheese is melted and combined.
