Instant Pot  Palak Paneer

Palak Paneer is a popular North Indian dish made with paneer cheese (an Indian fresh farmer’s cheese) and simmered in a rich flavorful sauce of spinach and aromatic spices. This simple instant pot version is a delicious meatless meal the whole family will love.

Main Ingredient

– 1 lb spinach washed and cleaned – 2 cups paneer, cubed – 1 ½ Tablespoon butter, divided – 1 teaspoon cumin seeds – 1 teaspoon minced ginger – 2 teaspoon minced garlic – 1 teaspoon green chilies, chopped – ½ cup chopped onions – 1 teaspoon salt – 3 Tablespoons yogurt – 1 Tablespoon all-purpose flour or whole wheat flour – 2 teaspoon lime juice – 1 teaspoon cumin powder – 1 cup water – 1 ½ teaspoon garam masala – 1/4 cup heavy cream

1. Set the instant pot on the SAUTE function and allow it heat up.

2. Add 1/2 tablespoon of butter to the pot.

Instructions:

3. Add in the cubed paneer and sauté it for 2 minutes or until it turns light golden brown, turning occasionally. Take it out and set it aside.

4. Add 1 tablespoon of butter in the same pot and add cumin seeds, chopped ginger, garlic, green chilies, and onions. Sauté until the onion changes color to light brown then add cumin powder.

5. Next mix together the flour and yogurt and add it into the onion mixture. Mix thoroughly.

6. Add the spinach along with ½ cup water and salt.

7. CANCEL the SAUTE button.

Instructions:

8. Close the lid and pressure valve. Select the PRESSURE COOK button on HIGH PRESSURE and cook for 2 minutes.

9. Once the pressure-cooking cycle is over, turn off the Instant Pot. Quick release the pressure by manually moving the valve from SEALING to VENTING position. Be careful, the steam is very hot!

10. Open the lid carefully.

11. Add the remaining ½ cup water and blend into a smooth paste using an immersion blender.

12. Select the SAUTE button.

13. Add the garam masala, lime juice, and paneer cubes and let it simmer for just 2 minutes.

14. Finally add fresh cream, mix it in, and CANCEL the SAUTE button.

15. Serve and garnish with cream.
