Instant Pot Pineapple Chicken

Instant Pot Pineapple Chicken is an easy weeknight dinner recipe that kids will love! This Hawaiian chicken inspired recipe is packed with chunks of pineapple in a sweet sauce. Serve over rice for an easy meal the whole family will adore.

Key Ingredient

– 2lbs chicken breast – 2 teaspoons Salt – 3 teaspoons White Pepper – ½ cup brown sugar – Juice of one lemon – 1 cup white vinegar – ¼ cup soy sauce – 1 20oz can of pineapple chunks in juice – 1/4 cup Cilantro – For serving: white rice – Optional: 3 TBSP cornstarch for thickening of sauce.

1. Dice chicken breast into approximately 1 inch squares and season lightly with salt and white pepper.


2. In a medium bowl whisk brown sugar, vinegar, lemon juice, and soy sauce.


3. Place chicken pieces on the trivet in your instant pot as best as possible to avoid burning or sticking to the bottom of the pot.


4. Dump the entire can of pineapple chunks with juice over the chicken, along with the sauce you mixed.


5. Place the lid on the instant pot and turn on.


6. Pressure cook on high for six minutes.


7. Allow to naturally release for 10 minutes, then quick release the remaining pressure.


8. Add all ingredients to a serving bowl, top with cilantro, and serve with rice.
