1. Preheat oven to 400 F. 2. Line a rimmed baking sheet with foil and spray with cooking spray. Set aside.

3. Wash the carrots and trim the ends, and if desired, peel them. Place the carrots on the baking sheet.

4. In a small bowl, mix together the olive oil and italian seasoning.

5. Pour the seasoning mixture over the carrots and toss to coat evenly.
