Sheet Pan Quesadillas

These easy ground turkey quesadillas are made in the oven and perfect for families who need to feed a lot of people quickly. Filled with your favorite taco toppings like ground turkey, peppers, onions, and plenty of melty cheese, these are a great way to switch up Taco Tuesday!

▢ 1 lb ground turkey ▢ 13 flour tortillas, small or medium sized ▢ 1 cup shredded Mexican cheese ▢ 2 Tablespoons taco seasoning ▢ ½ green bell pepper, chopped ▢ ⅓ cup white onion, chopped ▢ 2 Tbsp olive oil ▢ Cooking spray

1. In a large skillet, begin to heat ground turkey.

6. Saute for approximately 10 minutes, or until veggies are tender.

9. Lay out flour tortillas around the edge of the pan so that they are half on/off the pan.

10. Then lay tortillas down the center of the pan.

11. Spread cooked meat on the tortillas. Layer with sauteed veggies and cheese.

12. Fold the outer tortillas over the mixture, then cover the center with remaining tortillas.

13. Spray the top with additional cooking spray. Top with the 2nd baking sheet.

14. Bake at 415 degrees F. for approximately 20 minutes.

15. Remove the top baking sheet and continue to cook for another 6-7 minutes (or until the top is golden brown and crispy).

16. Remove from the oven and let cool slightly before slicing.
