Slow Cooker Basil Chicken with Coconut Curry Sauce

1. Place the chicken into the slow cooker.


2. In a medium bowl, whisk together the coconut milk, basil, salt, curry powder, onion, garlic, ginger and green chiles.


3. Pour the sauce over the chicken.


4. Place the lid on the slow cooker and cook on low for 6 hours.


5. Remove the lid and use a fork to shred the chicken.


6. In a small bowl, whisk together the COLD water and cornstarch.


7. Add this to the slow cooker and stir to mix thoroughly.


8. Place the lid back on and allow to cook for another 10 minutes.


9. Sprinkle the cilantro on top.


10. Serve with rice and/or naan.
