3. Carefully slice off the stop of a head of garlic, just enough to expose each garlic clove. Place the head of garlic on a piece of aluminium foil. Drizzle the garlic with a little olive oil and sprinkle on some salt. Wrap in the foil.
5. Remove the garlic from the oven, and then roast the potatoes for another 25-35 minutes more. The potatoes are done when they are soft when pierced with a fork.
9. Remove a few of the roasted garlic cloves from the head and place on a plate or in a small bowl. ( suggest 3-4, but if you want a lot of garlic flavor, use more!)
