Cowboy cookies made with sourdough discard are an easy and delicious treat. Soft chewy cookies stuffed with toasted coconut, pecans, and chocolate chips. Make a double batch, these disappear quickly!

1. Preheat oven to 350 F.

PREHEAT THE OVEN

2. Line a rimmed baking sheet with parchment paper and evenly spread the pecans and coconut out. Bake for 6-8 minutes, until toasted.

PREP PAN & TOAST

3. In a medium bowl, whisk together the flour, oats, cornstarch, salt, baking powder, cinnamon and baking soda.
