In a bowl, whisk olive oil, za'atar, allspice, and salt. Cut chicken thighs into 2" pieces, toss with marinade, and let sit for 10-30 minutes.
MARINATE

Thread the chicken pieces onto skewers (if you are using wood skewers remember to soak them for 20 minutes before using!)
ASSEMBLE

Preheat the grill or broiler. Cook skewers for 8 minutes, turn, and cook for another 8 minutes, until the internal temperature reaches 165°F.
