These easy steak kabobs are seasoned with za’atar spice and paired with rainbow vegetables before grilling to make flavorful and kid-friendly beef kabobs the whole family will love.
1. Mix the marinade ingredients thoroughly. Slice the steak into 1" pieces, removing excess fat. Submerge the beef in the marinade and refrigerate for 20-30 minutes or overnight for maximum flavor.
2. Heat grill to medium-high. Chop red onion, orange pepper, and yellow squash into 1" chunks. Skewer marinated beef with vegetables, alternating between onion, pepper, squash, and cherry tomatoes.
2. Sear kabobs for 1-2 mins on each side over high heat. Reduce gas grill to medium-high or relocate kabobs to medium heat (charcoals). Cook for 8 mins, flipping halfway, until internal temp reaches 135°F. Take off grill, cover with foil, and rest for 5 mins.
4. Place the yogurt, mint, garlic, lemon, and olive oil in a food processor and puree until smooth. Pour into a serving bowl and set aside until ready.
