Ingredients

bacon
sliced into thin strips

corn

sweet onion
chopped

red bell pepper
chopped

tablespoon
cajun seasoning

cup
heavy cream

chopped parsley
Instructions
Heat a cast iron skillet over medium heat.
Cut the bacon into strips and place in the skillet.
Cook, stirring frequently, until slightly crispy, about 8 minutes.
Add in the corn, onion, bell pepper and cajun seasoning.
Cook, stirring occasionally, until the vegetabes are soft, about 10 minutes.
Stir in the cream and allow to simmer for 5 minutes.
Turn off the heat, and let stand for 2 minutes.
Serve and garnish with chopped parsley.
Notes
You can use fresh corn, frozen corn, or a can of rinsed and drained canned corn.
