Instant Pot egg bites are a simple and easy make ahead breakfast the whole family will love! In just a few minutes and with a few ingredients, this grab and go recipe is perfect for your meal prep!
In a blender or food processor, combine the eggs and cottage cheese until smooth, about 3 minutes.
Pour the egg mixture into a bowl and stir in the ham, shredded cheese, salt and pepper.
Spray the egg molds with cooking spray.
Fill each mold with 1/4 cup of the egg mixture, being careful not to get any on the outside mold.
Place the lids on the molds and stack them together on the trivet.
Place 1 cup of water in the bottom of the instant pot.
Carefully place the trivet into the pot.
Turn the sealing vent to "seal".
Cook on low pressure for 8 minutes.
Allow to naturally release pressure for 5 minutes.
Quick release any remaining pressure.
Carefully remove the trivet from the instant pot.
