Roasted garlic mashed sweet potatoes are an easy and flavorful side dish that are perfect for holidays or evening meals. Sweet potatoes are roasted to perfection and mashed with roasted garlic, butter, and milk.
Wash the sweet potatoes to remove any dirt. Poke them with forks to give them some holes for steam to escape, and then wrap them in foil.
Carefully slice off the stop of a head of garlic, just enough to expose each garlic clove. Place the head of garlic on a piece of aluminium foil. Drizzle the garlic with a little olive oil and sprinkle on some salt. Wrap in the foil.
Place all the wrapped sweet potatoes and the garlic on a rimmed baking sheet. Place in the preheated oven 35 minutes.
Remove the garlic from the oven, and then roast the potatoes for another 25-35 minutes more. The potatoes are done when they are soft when pierced with a fork.
Allow to cool enough to handle.
Carefully remove the sweet potatoes from the foil and peel off the skins.
Place the potatoes in a large mixing bowl and mash slightly.
Remove a few of the roasted garlic cloves from the head and place on a plate or in a small bowl. ( suggest 3-4, but if you want a lot of garlic flavor, use more!)
Use a fork or spoon to mash them.
Add the butter, milk, salt, pepper, and mashed roasted garlic cloves to the sweet potatoes and mash to desired consistency.

Alternately, you can also place the ingredients into the bowl of a food procesor and blend until smooth instead of mashing. b
