These bacon and sausage breakfast burritos are a great meal prep recipe for busy families. Made with soft scrambled eggs, chopped bacon, crumbled sausage, and plenty of cheese, these breakfast burritos are the perfect way to stock your freezer for easy mornings.
Place the bacon strips on the prepared baking sheet, evenly spaced apart.
Bake for 10-12 minutes, until the bacon is done but not overly crispy.
Transfer the bacon to a plate lined with paper towels to drain off excess grease.
Heat a large skillet over medium-low heat.
Add 1 Tablespoon of butter to the pan and let it melt.
Add the diced onion to the pan and saute until translucent, stirring frequently, about 5 minutes.
Add the sausage to the pan with the onions and break up into smaller pieces as it cooks, stirring frequently, about 10 minutes.
When the sausage is done, transfer to a bowl and wipe out the pan with a paper towel.
Return the pan to the stovetop and turn on to low heat. Add the remaining 3 Tablespoons of butter to the pan and allow it to melt.
In a large bowl, crack the eggs and give them a nice stir with a fork or a whisk to blend the egg yolks and whites together.
Pour the eggs into the pan and season with salt, pepper, and garlic powder. Cook, stirring frequently, until the eggs are cooked through but not too dry.
Assemble the burritos
Chop the bacon into small pieces and grate the cheese.
Wash the counter or table you want to use to assemble the burritos.
Lay out all the tortillas across the workspace.
Evenly portion out all the scrambled eggs to the tortillas, laying them in a line down the center of the tortilla, leaving about ½” space on the edges.
Repeat with the sausage, bacon, and cheese, evenly portioning out each ingredient amongst the 20 tortillas, and leaving space on the edges.
To roll the burritos, fold both sides about 1” in, and then fold the bottom portion up to cover the fillings. Continue rolling until the burrito has been completely rolled. Place seam side down.
Wrap the completed burritos in freezer paper and tape to seal, or wrap in aluminum foil.
Place the burritos in the freezer.
Notes
How to Reheat
To reheat, remove the burrito from the foil and wrap loosely in a paper towel.
Place on a microwave safe plate and microwave for 1 minute.
Flip the burrito to the other side and microwave for an additional 1 minute.
Allow to sit for 30 seconds before enjoying it.

Store burritos in the freezer until ready to enjoy. Remember to label and date all burritos with date and information. Use within 6 months.
