Instructions
Preheat oven to 400
In a large mixing bowl, whisk together the eggs, salt, and pepper.

Stir in the cheese.

½ cup sharp cheddar cheese
In a large cast iron skillet, melt the butter.

Add in the onion and red pepper and cook until soft, about 2-3 minutes, stirring frequently.

Add the ham to the pan and cook until browned.

Add in the last tablespoon of butter.
Pour the egg and cheese mixture into the pan.
Use a rubber spatula to circle the edges of the pan to separate the eggs and make sure nothing is stuck.
Place the pan in the oven.
Bake for 15 minutes. The edges should be firm and lightly browned, and the center is still slightly jiggly.
Broil on high for 3 minutes to brown the top.
Notes
Store leftovers in an air tight container in the fridge for up to 3 days. Reheat in the microwave or oven until warm.
