Ingredients
2cupswater
1cupbasmati rice
1Tablespoonextra virgin olive oil
½white oniondiced
1garlic cloveminced
1teaspoonturmeric
1teaspoonmustard
¼teaspoonsalt
¼teaspoonpepper
1lemonzested and juiced
⅓cuproasted unsalted cashews or peanuts
2Tablespoonschopped cilantro
Instructions
Cook the rice with the water. I prefer to use a rice cooker, but you can use a pan on the stovetop, too.
When the rice is almost done, heat the olive oil over medium heat in a large skillet.
Add the white onion and cook, stirring frequently, until it is starting to turn translucent, about 5 minutes.
Add in the garlic, turmeric and mustard, and stir for 30 seconds.
Stir in the cooked rice, and stir well to combine thoroughy (all the rice will be yellow!).
Turn off the heat.
Stir in the salt, pepper, lemon zest, and lemon juice.
Top with the nuts and chopped cilantro. Serve.

Notes
You can make this recipe quicker by cooking your rice ahead of time, or by using prepared, microwave pouches of basmatic rice.You can use either peanut or cashews for the nuts.If preparing this ahead of time, reserve the nuts and cilantro for garnishing right before you serve.
