Apple Baked Oatmeal is an easy make ahead breakfast that is perfect for meal prep, brunches, or holiday breakfasts! Loaded with apples, cinnamon and walnuts, this recipe reheats great and is delicious! Not just for fall, this breakfast is great all year long!
4Tablespoonsunsalted buttermelted and cooled slightly
2applescored and diced
1cupchopped walnuts
Instructions
Preheat oven to 350 F.
Grease a 9x9 baking pan and set aside.
In a large bowl, mix together the oatmeal, brown sugar, ground flax seed, ground cinnamon, ground nutmeg, baking powder and salt.
In a medium mixing bowl, whisk together the milk, eggs, and vanilla.
Add the milk mixture and the melted butter to the oatmeal mixture and stir to combine. Allow to sit for a minute while you prepare the apples.
Core and dice the apples. You can leave the skin on, or peel it - the choice is yours. Arrange the diced apple pieces in the bottom of the prepared baking dish.
Top the apples with the chopped walnuts.
Pour the oatmeal mixture over the apples and walnuts and spread evenly.
Bake for 35-40 minutes, or until the oatmeal is set and firm, and starting to be golden brown on top.
Allow to cool for a few minutes and then serve.

Can I prepare this ahead of time?Yes, you can! Follow the directions up to set 8. Once the oatmeal has been prepared, instead of placing the baking dish in the oven, cover it with a lid or foil and place in the fridge overnight. Allow the dish to sit on the counter to warm while the oven preheats, and then bake as direction.How to store leftovers. This oatmeal is so good as leftovers! In fact, I kind of prefer it as leftovers to freshly baked. Store leftovers with a lid in the fridge for up to 3-4 days. Reheat the leftovers in the oven or microwave.How to serve this oatmeal. This oatmeal is great to eat as is straight from the pan. You can serve it with some maple syrup, or milk, or even a dollop of whipped cream if you feel fancy!
