Ingredients

can chickpea
rinsed and drained

cup
chopped cucumber
1
cup
halved cherry tomatoes
1
yellow bell pepper
diced
½
cup
parsley
chopped
¼
cup
feta cheese
crumbled
1
small red onion
peeled and sliced
2
tablespoons
lemon juice
3
tablespoons
extra virgin olive oil
Sea salt
to taste
Black pepper
to taste
Instructions
Wash and prepare all the produce.
Rince and drain the chickpeas.
In a large salad bowl, add chickpea, cucumber, cherry tomatoes, bell pepper, parsley, feta and onion.
In a small bowl, whisk together the lemon juice, olive oil, salt and pepper.
Drizzle the dresing over the salad and toss gently.
Serve or store in the refrigerator before serving.
Notes
Store this in an air tight container in the fridge for up to 4 days.
