Barbeque chicken meatloaf is a flavorful and moist weeknight dinner recipe. Ground chicken is combined with spices, breadcrumbs, and your favorite barbecue sauce to create a chicken meatloaf recipe that is simple and delicious. A perfect comfort food the whole family will love.
Line a rimmed baking sheet with parchment paper and set aside.
In a large mixing bowl, add the ground chicken, bread crumbs, freshly grated parmesan cheese, egg, 1/4 cup barbecue sauce, Italian seasoning, Worcestershire sauce, dried minced onion, minced garlic, salt, and pepper. Mix just until combined, do not over mix or your meatloaf will become tough.
Place the meatloaf mixture onto the prepared baking pan, spreading it in a thin log about 4" across and the length of the baking dish.
Bake for 15 minutes, and then brush the top of the meatloaf with the remaining barbecue sauce.
Bake for an additional 15 minutes, or until an internal temperature reaches 165 degrees F with a meat thermometer.
Let the meatloaf rest for at least 5 minutes before slicing.
Sprinkle with chopped parsley and enjoy!
