Ingredients

granulated sugar

peeled and roughly chopped

Instructions
In a small saucepan, combine the sugar and 1 cup of water with the fresh ginger.
Bring to a simmer over medium heat and stir constantly until the sugar dissolves.
Turn off the heat and allow it to cool to room temperature.
Use a food processor or a blender to blend the pineapple chunks down as much as possible, about 5 minutes.
Strain the pureed pineapple through a fine mesh sieve, gently pressing down to get as much juice out as possible.
Remove the ginger from the cooled sugar water.
In a pitcher, combine the strained pineapple juice, ginger sugar water, and the remaining cups of water.
Refrigerate until cool, and serve over ice.
