Ingredients

medium carrots
peeled
¼
cup
water

large garlic cloves

canola oil

unsalted butter
salt and pepper
Instructions
Preheat oven to 400 Degrees.
In the baking dish, whisk together the water, oil, salt and pepper.
Toss in the garlic cloves and carrots and toss to coat with the liquid.
Dice the butter up into small pieces and place over the carrots.
Tent with foil and roast for 30 minutes, until tender.
Uncover and roast for another 30 minutes, until all the water has evaporated and the carrots are lightly brown in spots.
Transfer the carrots and the garlic to a plate and serve.
