Ingredients
1lbground beef
1medium white onionchopped
10ouncessalsa
1can black beansrinsed and drained
1cupcorn
10ouncesenchilada sauce
10ouncessour cream
1Tablespoontaco seasoning
2cupsshredded monterrey jack cheese
8flour tortillas8"
Toppings
1avocadosliced
1cupcherry tomatoessliced in half,
½cupsour cream
¼cupchopped cilantro
1cuptortilla chipscrushed
Instructions
Preheat the oven to 400 F and grease a 2 quart baking dish.
In a large skillet over medium high heat, cook the beef and the onion over medium heat until the meat is no longer pink. Strain any excess grease from the beef if needed.
Stir in the enchilada sauce, salsa, beans, corn, sour cream, taco seasoning and cumin.
Spoon a generous amount of the meat mixture into the bottom of the baking dish.
Sprinkle with grated cheese.
Arrange enough flour tortillas on top of the meat mixture to cover the meat.
Continue layering meat, cheese and tortilla.
The last layer should be a generous coating of cheese
Cover with foil that has been sprayed with cooking oil and bake for 25 minutes, or until bubbly.
Let stand for five minutes - it needs to set!
Cool for 5 minutes, and then cut into 6 servings.
Top with lettuce, tomato, cilantro, and crumbled tortilla chips.
