This cheesy rice is a delicious and easy weeknight side dish.

Ingredients

white rice
medium or long grain

unsalted chicken broth
1 ½
cups
shredded cheddar cheese

salt

ground black pepper

garlic powder
Instructions
Place the rice in the saucepan and add fresh water to cover the rice.
Use your hand to swish the rice around in the water. Notice how the water turns cloudy white.
Carefully drain the water from the rice. Re-cover the rice with more clean water.
Repeat until the water that you drain away is mostly clear.
To the saucepan with the washed rice, add the broth.
Cover the pot with a lid, and bring to a simmer.
Simmer on low heat for 15 minutes, until the broth has been absorbed.
Stir in the shredded cheese, salt, pepper, and garlic powder.
Replace the lid on the pan and allow the rice to sit for 5 minutes to allow the cheese to fully melt.
Notes
Leftovers can be stored in an airtight container in the fridge for up to 3 days. Reheat in the microwave until warmed through.
