Ingredients
2english cucumberssliced thin
1shallotsliced thin
4-6radishestops removed and sliced thin
¼cupchopped fresh dill
3Tablespoonsextra virgin olive oil
2Tablespoonswhite wine vinegar
juice 1/2 lemon
1teaspoondried oregano
¼teaspoonsalt
¼teaspoonground black pepper
Instructions
Wash and dry the cucumbers, shallot, and radishes.
Slice the veggies into thin strips.
Remove the dill fronds from the stems and chop the fronds into small pieces.
In a medium sized mixing bowl, whisk together the olive oil, white wine vinegar, lemon juice, dried oregano, salt and pepper.
Add the sliced cucumbers, shallots, radishes, and dill to the bowl and toss to combine.
Notes
Store in an airtight container in the fridge for up to 2 days.
