I love serving cucumber salad with a meal! Not only does it add lovely color, texture, and flavor to a plate, but it’s such a quick and simple recipe to make! Kids love them, and this is a great kid friendly addition to dinner.

These Mediterranean cucumber salad is made with fresh cucumbers, thin shallots, and sliced radishes for maximum flavor, color, and crunch. Dressed with a simple vinaigrette with lemon juice, dill, and oregano, it’s got so much flavor, but isn’t overpowering. THis is the kind of recipe you can have again and again and still love it!

How to make this cucumber salad

This cucumber recipe is very simple to make. For the full set of directions, please make sure you scroll down to the recipe card below.

  1. Wash and dry the cucumbers, shallot, and radishes.
  2. Slice the veggies into thin strips.
  3. Remove the dill fronds from the stems and chop the fronds into small pieces.
  4. In a medium sized mixing bowl, whisk together the olive oil, white wine vinegar, lemon juice, dried oregano, salt and pepper.
  5. Add the sliced cucumbers, shallots, radishes, and dill to the bowl and toss to combine.

Storage Information

This salad does great when it sits in the fridge for a little bit to let the flavors come together. But the longer it sits, the softer the cucumbers and radishes become, so they lose their snappy bite to them.

They are best when eaten the same day they are made, but they can sit in the fridge for a few hours and still be great.

Store these cucumbers in an airtight container in the fridge for up to 2 days.

Ingredients

  • 2 english cucumbers, sliced thin
  • 1 shallot, sliced thin
  • 4-6 radishes, tops removed and sliced thin
  • 1/4 cup chopped fresh dill
  • 3 Tablespoons extra virgin olive oil
  • 2 Tablespoons white wine vinegar
  • juice 1/2 lemon
  • 1 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper

Instructions
