Ingredients
For Chicken:
1TBSPExtra Virgin Olive Oil
½white onion
2garlic cloves
1TBSPtomato paste
½cupraisins
15ozfire roasted diced tomatoesdrained of liquids
¼cuppepitasunsalted and roasted
1tspmild chili powder
½tspground cinnamon
1tsporegano
1tspcumin
1tsppepper
1tspsmoked paprika
1pinchsalt
1TBSPapple cider vinegar
1cupunsalted chicken broth
2ozdark chocolate or 2 TBSP cocoa powder
2lbboneless skinless chicken thighs
For Taco Assembly:
8Corn Tortillas
½cupCotija Cheese
¼cupchopped Cilantro
1Avocadosliced
1Limesliced into sections
½cupthinly sliced radishes
¼cupthinly sliced red onions
Instructions
In a food processor, combine the olive oil, onion, garlic, tomato paste, raisins, diced tomatoes (drained of juices), pipits, chili powder, cinnamon, oregano, cumin, pepper, smoked paprika, pinch of salt, apple cider vinegar, chicken broth and chocolate to form a sauce.
Add the chicken thighs to the slow cooker and add the mole sauce over top.
Place the lid on and cook on low for 6 hours or on high for 4.
Shred the chicken with two forks.
Serve with corn tortillas, cotija cheese, chopped cilantro, sliced avocado, lime sections, sliced radishes and red onions.
