Ingredients
Salad
3cupsbaby spinach
3cupsromaine lettuce or other crispy greens
10slicesof baconcooked crisp and crumbled
2cupsripe strawberrieswashed and quartered
1ripe avocadosliced
¼cupsliced almonds
Dressing:
¼cupplain greek yogurt
¼cupmayonnaise
2Tablespoonswhite vinegar
1Tablespoongranulated sugar
1teaspoonpoppy seds
salt and pepper to taste
Instructions
Start by cooking the bacon until crisp. Remove to a plate lined with a paper towel and allow to cool.
When the bacon is cool, crumble.
In a small bowl, mix the dressing by whisking together the greek yogurt, mayonnaise, white vinegar, sugar, poppy seeds and salt and pepper until smooth and creamy.
To serve, combine the spinach and lettuce and divide between four plates.
Top each plate with equal portions of the bacon, strawberries, avocados, and sliced almonds.
