How to make strawberry avocado salad

This recipe is simple to make! For the full set of directions, please scroll down to the recipe card below. This is just a general overview on how to make it to help you plan.

Cook the bacon.

  1. Start by cooking the bacon until crisp. I like to bake mine on a rimmed baking sheet for about 15 minutes at a 400 degree oven. You want it to be just crunchy.
  2. Remove to a plate lined with a paper towel and allow to cool.
  3. When the bacon is cool, crumble.

Mix the dressing.

  1. In a small bowl, whisk together the greek yogurt, mayonnaise, white vinegar, sugar, poppy seeds and salt and pepper.
  2. Taste and season with salt and pepper as desired.

Serve the salad.

  1. Wash, hull, and quarter the strawberries.
  2. Dice the avocado.
  3. Combine the spinach and lettuce and divide between the plates.
  4. Top each plate with equal portions of the crumbed bacon, quartered strawberries, diced avocados, and the sliced almonds.
  5. Drizzle on the dressing and enjoy!

Ingredients

Salad

  • 3 cups baby spinach
  • 3 cups romaine lettuce or other crispy greens
  • 10 slices of bacon cooked crisp and crumbled
  • 2 cups ripe strawberries washed and quartered
  • 1 ripe avocado sliced
  • ¼ cup sliced almonds

Dressing:

  • ¼ cup plain greek yogurt
  • ¼ cup mayonnaise
  • 2 Tablespoons white vinegar
  • 1 Tablespoon granulated sugar
  • 1 teaspoon poppy seds
  • salt and pepper to taste

Instructions

  • Start by cooking the  bacon until crisp. Remove to a plate lined with a paper towel and allow to cool.
  • When the bacon is cool, crumble.
  • In a small bowl, mix the dressing by whisking together the greek yogurt, mayonnaise, white vinegar, sugar, poppy seeds and salt and pepper until smooth and creamy.
