Ingredients

  • 2 cups sweet corn
  • 1 medium jalapeno finely diced (you could also use green or red bell pepper)
  • ½ red onion finely chopped
  • ½ cup cilantro chopped
  • 1 lime juiced
  • ½ teaspoon salt
  • ½ teaspoon pepper

Instructions

  • In a large bowl, mix together all the ingredients.
  • Taste and adjust seasoning if needed.
  • Allow to sit for 10-15 minutes to "marinate" and then Enjoy!
