Ingredients
Dressing:
2.5TBSPcreamy peanut butter
2TSP+ 2 tsp apple cider vinegar
1TBSPextra virgin olive oil
2tsphoney
1 ½tspsoy sauce
½tsporange zest
½tspgrated ginger
¼tspgrated garlic
3TBSPchopped fresh cilantro
Salad:
1head kalestemmed and chopped
1cupsugar snap peassliced in half
1red bell peppersliced into thin strips
2carrotsthinly sliced
⅓cupchopped peanuts
½cupcooked and shredded chicken
Instructions
Dressing:
Combine all ingredients for the dressing in a container with a lid and shake, shake, shake, until well combined.
Allow to sit for at least 10 minutes for flavors to come together.
Store in the fridge for 3-4 days.
