Place the diced pieces into the bottom of the popsicle molds.
Add the remaining peaches, milk, granulated sugar and cornstarch to the jar of a blender and blend until smooth.
1/2 cup whole milk, 1/4 cup granulated sugar, 1 Tablespoon cornstarch
Pour the mixture over the diced peaches in the popsicle molds, filling to the top but not over filling.
Gently tape the popsicle mold on the counter to remove any air bubbles. Add any extra filling if needed.
Add the popsicle sticks.
Place in a level spot in the freezer for 6 hours or overnight.
Remove and enjoy immediately.
Notes
These are best when eaten freshly made, but can last in the back of the freezer for a while. The longer they sit the more likely they are to develop ice crystals. They are still safe to eat but will have a crunchier texture.
