Ingredients

carrots
sliced into coins (I recommend rainbow carrots because they are pretty but all orange work well, too!)

honey

teaspoon
lemon juice

Harissa

cumin

teaspoon
smoked paprika
¼
teaspoon
salt
¼
teaspoon
black pepper

Tablespoon
fresh mint
chopped

feta
crumbled
Instructions
Preheat oven to 400F.
Slice the top and end off the carrots.
4 cups carrots
Slice the carrots into coins and place on a rimmed baking sheet.
In a medium bowl whisk together the olive oil, honey, and spices.
1/4 cup olive oil,
1 Tablespoon Harissa,
2 teaspoon cumin,
1/2 teaspoon smoked paprika,
2 teaspoon lemon juice,
2 teaspoon honey,
1/4 teaspoon salt,
1/4 teaspoon black pepper
Toss this with the carrots until well coated, and evenly spread on the baking sheet.
Bake for 20 minutes, stirring halfway through.
Place the carrots on a serving tray, and sprinkle with the mint and the feta. Enjoy!

Notes
Leftovers can be stored in an airtight container in the fridge for up to 4 days. Reheat until warmed through.
