Muffins and Quick Breads
There’s a reason muffins are one of my favorite things to bake with kids. You measure, you stir, you scoop, and before long you have something warm to eat. (The flour on the floor is just part of the deal.)
These muffin and quick bread recipes are made for real family life. Bake a batch on Sunday and you’ve got breakfasts and after-school snacks ready for the week. Most muffins and quick breads freeze well, too, so you can grab one on those mornings when nobody can find their other shoe.
You’ll find cozy classics, a few that are a little more adventurous, and yes, some of these have veggies in them. We don’t hide them, though. The carrots in Banana Carrot Muffins and the zucchini in Chocolate Zucchini Muffins are right there for kids to see, grate and ask questions about. That curiosity is the whole point.
So grab a mixing bowl and a helper or two. Let’s bake something!
