Some nights, figuring out the main dish is the easy part.

It’s the “what should I serve with it?” question that can leave you staring into the refrigerator at 5:00 PM.

That’s where these easy roasted potatoes come in.

Made with simple ingredients and tossed in a flavorful Dijon dressing, they’re the kind of reliable side dish that works with almost anything. Chicken, pork, burgers, sandwiches – if it’s on your dinner table, there’s a good chance these potatoes will fit right in.

The potatoes roast until they’re crispy on the outside and soft on the inside, while the tangy Dijon dressing adds just enough flavor to make them feel a little special without adding extra work.

If you’re trying to make dinner feel easier, having a few dependable side dishes in your back pocket can make all the difference. This is one of those recipes you’ll find yourself coming back to again and again.

Tips to get crispy roasted potatoes

To make the perfect crispy potato wedges, you only need a few simple tricks.

  • Preheat the oven with the pan in the oven. That way everything is super hot and starts getting crispy right away!
  • Do not overcrowd your pan. You need to make sure that your potato wedges have enough room around each piece for the hot oven air to surround them and make them crispy. If the potatoes are too close together they will steam and get soggy instead of roast and get crispy. If you need to use two pans, that’s ok!

One of the easiest ways to make dinner feel less stressful is to have a handful of side dishes you know by heart.

When you don’t have to reinvent the wheel every week, meal planning becomes much simpler. Pair these potatoes with grilled chicken, pork chops, burgers, sandwiches, or even breakfast-for-dinner and you’ve got an easy meal that comes together without much thought.

That’s exactly the kind of flexibility I teach in my Dinner Rhythms Workshop, creating simple meal systems that work with your family’s real schedule so dinner feels easier night after night.

So you don't have to cook the potatoes before roasting? Just take it out the fridge and do that? I'm 15,learning to cook

  2. Sounds delicious. I've made potatoes before with whole grain mustard but never regular Dijon. Will have to try these!
