This cajun chicken sandwich includes the holy trinity of cajun cooking – onion, celery, and bell pepper! Then combine it with even more flavor from cajun spice mix, mustard, sweet relish, and more, and you have yourself a quick but insanely flavorful lunch that is decidedly not boring.

Whether you serve this cajun chicken salad recipe as a quick lunch or dinner, you are going to want to make this again and again!

What do I need to get started?

  • Chicken – Use cooked and shredded chicken – rotisserie is great for this!
  • Celery, red onion, and red bell pepper – these veggies add nice flavor, color, and texture. Dice them small for the best texture. You can substitute any other variety of onion and bell pepper if needed.
  • Green onions – optional but highly recommended
  • Mayonnaise – use your favorite brand
  • Paprika
  • Cajun seasoning (affiliate link) – I recommend using a salt free version since we are using celery salt, too.
  • Dill – fresh is best! Like, so, so, so much better than dried! 
  • Celery salt – adds an extra layer of flavor. You can replace it with regular salt if you want.
  • Mustard – Creole mustard is my favorite for extra zesty spice, but you can also use a nice dijon for less spice but still a complex flavor, or plain yellow mustard if you don’t want any added spice
  • Sweet Relish
  • Hot sauce – this is great sprinkled on top if you want extra heat. Use your favorite variety!

*A note on spiciness:

This recipe can easily be adapted for different spice levels depending on what you want. The key is to find a cajun seasoning that your family enjoys and isn’t too spicy. I really like the one from The Spice House, as its really flavorful but not overly spicy, is salt free, and super high quality. 

For those that want more spice, drizzle some of your favorite hot sauce on top of the sandwich before you eat!

How to make this easy sandwich

This chicken salad is a super quick lunch recipe! For the full set of directions, make sure you scroll down to the recipe card below:

  1. Shred the chicken
  2. Dice the celery, red onion, red pepper, and green onion into small sized pieces. You want a fairly small, even dice so that they combine well into the chicken salad – you don’t want a giant chunk of raw onion in a bite. 
  3. In a large mixing bowl, combine the shredded chicken, diced veggies, mayonnaise, paprika, green onion, cajun seasoning, mustard, relish, dill, and celery salt.
  4. Stir to combine well.
  5. Store in an airtight container in the fridge until ready to use. I like to make sure it has at least 30 minutes in the fridge before serving to allow the flavors to blend together well. 

Serving Note: If you are serving this at a get together, or want it to look extra fancy and impressive, you can sprinkle on some chopped fresh parsley. Make sure to have a bottle of hot sauce beside for those that want it!

How to serve this to your family

Serve this chicken salad recipe on toast, in a croissant, or on a bed of lettuce like a salad. You could also serve it with crackers or chips!

If serving this as a sandwich, serve with lettuce and sliced tomatoes, and hot sauce on the side for those that want it!

Storage

Store this in an airtight container in the refrigerator for up to 4 days.
