Huli Huli Chicken is a famous grilled chicken recipe from Hawai’i. These chicken thighs are marinated in an easy marinade before being grilled to perfection. Flavorful and family friendly, this recipe serves 4-6 people.

This grilled chicken recipe is just so fantastic! It’s no wonder why it has become known and loved all over the world – it is quick and easy to make, uses simple ingredients, and is absolutely delicious!

If you have never been to Hawai’i, this chicken is often served at luaus, and as part of a plate lunch (which is served with white rice, macaroni salad and an entree).

Using boneless skinless chicken thighs is my favorite because the meat is flavorful and moist is forgiving. Its ok if you let it marinade a little less or a little more (I find that chicken breast can get a weird texture when marinated too long, and it is also easy to over-grill and dry out).

However, if you prefer you can also use boneless skinless chicken breasts for this recipe, too.

How to make this easy grilled chicken

This recipe is simple to make! For the full set of directions, please scroll down to the recipe card below. This is just a general overview on how to make it to help you plan.

  1. Mix the marinade. Remove 1/3 cup of the marinade and store it in the fridge for use during grilling.
  2. Add the chicken to the marinade, ensuring it is well coated. Marinate for at least 20 minutes and up to 24 hours.
  3. Heat the grill. When hot, add the chicken thighs to the grill.
  4. Grill for 5-7 minutes per side, until an internal temperature reads 165 F. As you grill, baste with the reserved marinade.
  5. Allow the chicken to rest for 5 minutes.
  6. Enjoy!

How to serve Huli Huli chicken to your family

This grilled chicken is a perfect summer meal! For true Hawaiian inspired meal, serve this with white rice, Hawaiian macaroni salad, and some fruit on the side! Pineapple is always popular, but you can also serve papaya or mango, too!

Storage Information

To store any leftover chicken, place in an airtight container and store in the fridge for up to 4 days. Reheat if desired before serving.

Ingredients

  • ½ cup ketchup
  • ½ cup soy sauce
  • ½ cup brown sugar
  • ¼ cup rice vinegar
  • 1' piece ginger peeled and grated
  • 2 garlic cloves peeled and grated
  • 3 lb boneless skinless chicken thighs

Instructions

  • In a large sized mixing bowl or a large ziplock bag, mix together the ketchup, soy sauce, brown sugar, rice vinegar, ginger and garlic.
    1/2 cup ketchup, 1/2 cup soy sauce, 1/2 cup brown sugar, 1/4 cup rice vinegar, 1' piece ginger, 2 garlic cloves
  • Remove 1/3 cup of the marinade sauce and store in the fridge for later.
  • Add the chicken and toss to coat.
    3 lb boneless skinless chicken thighs
  • Marinate for at least 20 minutes, and up to 24 hours.
  • Preheat the grill to medium high heat.
  • Grill the chicken pieces, 5-7 minutes per side, basting with the reserved marinade, until an internal temperature reads 165 F.
  • Allow the chicken to rest for 5 minutes, then serve.
