It’s a simple side dish that delivers big wins—even with the pickiest eaters.

This roasted asparagus recipe is as simple as it gets: just fresh asparagus, olive oil, salt, and pepper. But when it hits the oven, something magical happens. The spears turn tender, a little crispy around the edges, and take on a toasty, irresistible flavor.

When I was growing up, I was sure I hated asparagus. One night, I had dinner at a friend’s house and her parents served boiled asparagus. It was slimy. It tasted like wet grass. And I politely pushed it around my plate, convinced I’d never eat asparagus again.

Fast forward to college, when I attended a formal dinner and cautiously tried the roasted asparagus on my plate. It was tender, a little crisp, and genuinely delicious. I was shocked. That was the moment I realized something important: how food is prepared makes all the difference.

Texture, flavor, smell—they all shift depending on the cooking method. And that’s why it’s so important to try things in new ways, especially with kids. Just because they didn’t like a veggie one way doesn’t mean they won’t love it another.
