Lunch has never been my strong suit. Weeknight dinner, I got it. Lazy weekend breakfast? On it. But without fail, I usually realize it’s time for lunch at the precise moment my kids decide they are starving. We have always relied on leftovers to meet our lunch needs, but now that all the girls are home during the day doing school, leftovers won’t feed all 4 of us.

In a search for lunches that are both quick and easy and also delicious, we have been turning to Chef’s Craft flame grilled chicken to help prepare delicious meals in no time.

Chef’s Craft farm raised chicken is all natural and minimally processed, and a great option for busy families who need great food that is easy. Previously only sold to restaurants, you can now find the chicken breasts and chicken breast chunks in Walmarts and Food Lions across the nation – check out their website to see if the chef inspired chicken is in a store near you.

Chicken Supreme Pizza

I love a good homemade pizza recipe, especially if it’s one you can quickly put together. Chicken Supreme has a great selection of toppings – green peppers, red onions, mushrooms, black olives, oregano, and of course – great chicken!

It’s got color, texture, and lots of flavors that go together well. And it is so quick to prepare with the thanks of a few grocery store short cuts and is simple enough that kids can help you make it.

How to make this recipe

This recipe is a perfectly quick recipe you can make for lunch or a quick dinner. We love it for the really busy nights when we need something quick, but we probably enjoy it for a quick lunch during the day even more! It’s perfect for homeschoolers and virtual learning as it can be made quickly with little effort – and is perfect for kids to help you make, too.

Try it with either pre-made naan or make your own sourdough naan!

For the full recipe, please make sure you scroll down to the recipe card below; here is a quick overview of how to make this:

  1. Assemble the ingredients you need and prepare the produce.
  2. Preheat the oven to 350 F and prepare two baking trays by lining them with parchment paper.
  3. Place the naan on the prepared baking tray.
  4. Spoon the pizza sauce on the naan flatbread, taking it almost all the way to the edge.
  5. Sprinkle the cheese evenly over the sauce.
  6. Evenly sprinkle the onions, peppers, olives, and mushrooms over the cheese.
  7. Top each naan pizza with several grilled chicken breast chunks (I like using 5, but you do you).
  8. Bake for 10-12 minutes, or until the chicken and naan are hot and the cheese is melted.
  9. Allow to sit for 1 minute before slicing and enjoying.

*Recipe Hint: I find that working with both the chicken nuggets and the naan from frozen works really well – so that everything is perfectly heated the same time the cheese is melted. You can also heat the chicken halfway, and use thawed naan.

Prepping ahead of time

This quick meal is fast and easy to make, but if you want to make it even faster, here are some simple ways you can prepare ahead:

  • Slice the red onions, peppers, and mushrooms ahead of time and store in an airtight container in the fridge.
  • Use prepared pizza sauce and pre-shredded pizza cheese from the grocery dairy section.
  • Use Chef’s Craft Gourmet Chicken Grilled Breast Chunks from the freezer section of either Walmart or Food Lion.

How to serve this to your family

Pizza is always great to serve to kids! If you have kids who love to dip, I suggest pairing this with a lovely ranch on the side.

You can slice each flatbread pizza into whatever size slices you need to suit your family members.

To make this a bigger meal, serve a salad on the side and add some fresh fruit that will add color and texture to your meal, like peaches, grapes or strawberries.

Kids in the kitchen: How your kids can help you cook

Pizza is a great recipe to make with kids because it gives them the confidence and independence to create their own meals. This recipe is great to practice knife skills, spreading, and evenly distributing toppings.

  • Kids aged 1-3 can help you spread the pizza sauce, sprinkle on the cheese, and add on toppings.
  • Kids aged 4-6 can do everything above plus help you slice the mushrooms and peppers.
  • Kids aged 7-10+ can help you do everything above, plus help you carefully slice the red onions and cut the pizza into slices.

*Please note that these recommendations are generalized, and to please use your personal discretion with your child’s skill level. And always, always supervise! Read more about how to have your children help you in the kitchen.

Chicken Supreme Flatbread Pizza is a great quick and easy recipe that is perfect for both lunch and dinner. With toppings like peppers, red onions and olives, and shortcuts like frozen naan bread and pre-grilled chicken, this family friendly meal will be ready quickly.

Ingredients

  • 1 package Chef's Craft flame grilled chicken breast chunks
  • 4 frozen flatbread naan
  • 16 oz pizza sauce
  • 2 cups shredded mozzarella cheese
  • 1 green pepper, diced
  • 1 cup diced mushrooms
  • 1/2 red onion, sliced thinly
  • 2.25 oz black olive slices
  • 1 teaspoon dried oregano

Instructions

  1. Preheat the oven to 350 F.
  2. Line two baking trays with parchment paper.
  3. Place the naan on the prepared baking trays.
  8. Sprinkle the dried oregano evenly over the flatbread pizzas.
  9. Bake for 10-12 minutes, or until the chicken and naan are hot and the cheese is melted.
  10. Allow to sit for 1 minute before slicing and enjoying.

Notes

You can use a "pizza blend" of shredded cheese in place of the mozzarella.
