Mint & Watermelon Agua Fresca
Watermelon agua fresca with mint is a refreshing and bright drink. Made with fresh watermelon, a mint simple syrup, and lime juice all blended together in this quick and simple but flavorful beverage that kids and adults alike will love.
Agua Frescas are fruit puree drinks that originated in Mexico and quickly spread across Latin America. In English, “Agua Fresca” means “fresh water” and these drinks are definitely a delicious way to stay hydrated on a hot day.
This version is made with fresh watermelon and a mint flavored simple syrup, but you can use any fresh fruit you like!

How to make this easy drink

Make the mint simple syrup
- In a small saucepan, add ¼ cup water, ¼ cup granulated sugar, and ¼ cup fresh mint.
- Bring to a gentle boil and then reduce the heat to low, and simmer, stirring constantly, until the sugar dissolves from the bottom of the pan.
- Turn off the heat and allow the mint to infuse the simple syrup until room temperature.
Blend the drink.
- In a food processor, add the cubed watermelon, mint simple syrup, and lime juice.
- Blend until smooth.
- Serve and enjoy!
Should you strain agua fresca?
This is totally up to you if you want to strain your watermelon puree or not.
Straining the watermelon will help remove any fleshy parts of the watermelon that didn’t blend well. This will give the drink a thinner, more watery texture.
You can also leave your agua fresca as is, and enjoy it this way. The texture will be a bit thicker and have some more natural fleshy pieces in it. This is my preferred way of making this drink, and the way I serve it. But the choice is totally up to you!
Tips for making Agua Fresca
- Look for super ripe watermelon for the best flavor. You can use frozen watermelon if you are out of season.
- If you want a drink that is sweeter, you can add 1 Tablespoon of sugar at a time until you get the desired sweetness level.
- If you prefer a more tart drink, you can use twice the amount of lime juice.
Serving suggestions
- Serve with a garnish of fresh mint or a small slice of watermelon.
- You can use frozen chunks of watermelon like ice cubes to keep your pitcher cold.
Storing Aqua Fresca
Store leftover agua fresca in a closed pitcher in the refrigerator for up to 3 days. Some separation might occur as it sits, but just stir it back up before serving.
