Korean strawberry milk is a popular drink served during the summertime in cafes. It is made entirely with fresh, real strawberries – no artificial colors or syrups here!

The chunks of fresh strawberries in the syrup give it a fun texture and extra strawberry flavor and make this version of strawberry milk to be extra special.

Fresh milk is added directly on top of the homemade strawberry syrup which gives a really fun and unique appearance because you can see the separation in the glass. Its so pretty! Then when you are ready to drink, you just stir it all up together.

How is Korean strawberry milk different from regular strawberry milk?

The real difference here is the strawberries! The strawberries aren’t blended totally smooth, so you get great texture from the homemade strawberry syrup and the chunks of strawberries.

How to make this recipe

This recipe is so simple to make and is great for kids to assist with. For the complete set of directions, please make sure you scroll down to the recipe card below.

Make the strawberry syrup

  1. Wash, core, and dice the strawberries.
  2. In a small saucepan, combine the diced strawberries, sugar, and water.
  3. Simmer over medium low heat, until it simmers. Cook, stirring frequently, until the strawberries are mostly cooked down. Mash the strawberries as you go with your spatula or wooden spoon. It is done when it has thickened into a nice thick syrup and most of the strawberries have broken down.
  4. Remove from heat, stir in the vanilla extract, and allow to cool.

Assemble the strawberry milk

  1. Place a few tablespoons of the cooled strawberry syrup into the bottom of a glass.
  2. Top with fresh chopped strawberry pieces.
  3. Pour in your favorite milk to top the glass.
  4. Enjoy!

  • Make sure you allow the strawberry syrup to cool all the way before adding it to the milk.
